Subject: Feedback on Agenda Item #11
[EXTERNAL SENDER]
Dear Town Council Members,
I am a 40-year resident of Los Gatos. Regarding Agenda Item #11: With Restoration Hardware bringing its restaurant to Los Gatos, this is a great opportunity to ask RH to include plant-based options on their menu. The offering of plant-based menu options would be in line with the Town's Green Monday Resolution, and the Los Gatos General Plan 2040 (Section 8.12 Program CC), promoting plant-based eating in the town.

It is imperative for Los Gatos take a leadership position on the issue of food. The major ecological crises that we face – global warming, species extinction, deforestation, water scarcity, water pollution, and chemical pollution - are all driven by a food system based on animal agriculture. By contrast, eating a plant-based diet reduces greenhouse gas emissions by 73%, the land area needed for growing crops by a whopping 75%, and reduces our water footprint by half. As stated in the seminal report Reducing food’s environmental impacts through producers and consumers, colloquially known as The Oxford Study, “Eating a vegan diet is the single biggest way an individual can reduce their environmental impact, reducing emissions, land use, and water use compared to diets high in meat.”
Thank you for considering my feedback.

Best regards,
Karen Rubio
Organizer
Eating plant-based is the single most impactful thing we can do to save our Earth.
